Delicious vegetable omelet with mushrooms, feta cheese and a tablespoon of flax seeds :)

Ingredients

This is the list of ingredients to prepare a portion size of 556 grams.

  • 2 eggs
  • 3 cups of mushrooms slices
  • 1 tomato
  • 1/2 cup of spinach leaves
  • 1/2 of onion (chopped)
  • 1/2 cup of chopped pepper
  • 1 ounce of feta cheese
  • 1 tbsp of flaxseed
  • 1 tbsp of olive oil

Preparation

Heat tablespoon of olive oil in a medium skillet over medium heat. Add onions and wait until softened. Then add  mushrooms, tomatoes, peppers and spices. Cook for 5 minutes or until peppers are tender. Then addspinach and stir all. Pour the eggs into the frying pan and sprinkle with feta cheese.  Let the edges of the omelet will be fried, then gently lift the one side of the omelet checking whether it is ready. When the omelette is ready, you can move it out of the pan onto a plate.
