Ingredients

This is the list of ingredients to prepare 6 portions size of 367 grams.

  • 2 eggplants (peeled and chopped)
  • 1 red pepper
  • 1 yellow pepper
  • 1 can of tomatoes in juice
  • 1 cup of chopped onion
  • 2 tbsp of olive oil
  • 4 garlic cloves
  • 2 cups of cooked brown rice

Preparation

Ingredients:
2 large eggplants, peeled and chopped
1 large red bell pepper, chopped
1 large yellow pepper, chopped
1 cup of chopped onion
2 tablespoons of olive oil
1 cup of tomato puree or 1 can of tomatoes in juice
1 teaspoon of basil
1 teaspoon of dried oregano
4 large garlic cloves, chopped
Salt, black pepper and sweet pepper
 2  cups of cooked brown rice
 
Preparation:
Heat 1 tablespoon of olive oil over medium heat in a large pot.
Add eggplant and cook until tender.
Set aside on a plate. At the same time heat the remaining olive oil.
Add red and yellow peppers, and onions.
Cook for 5 minutes, until the vegetables begin to become soft.
Add garlic. Cook for another 2-3 minutes.
Then add eggplants with tomatoes puree, basil, oregano, salt, pepper and paprika
Cook until the sauce begins to bubble.
Serve cold with a side of Greek yogurt, or hot with rice, pasta or whole-wheat tortilla
